Olleta

Ingredients

  • 1/4 of pork chop
  • 1/4 of pig ear
  • 1 pig foot
  • 150 Gr of white beans
  • 150 Gr of "pintas" beans
  • 150 Gr chopped wheat
  • 2 onion blood sausages
  • 2 carrots
  • 2 turnips
  • 4 penques (cardoons)
  • 1 sweet potato
  • 2 leafs of chards
  • Salt
  • Oil

Preparation

Put the beans immersed in water the night before. Wash and cut the vegetables.

Place all of the ingredients on a pot with water, season them and let it cook slowly during approximately two hours and a half.

Some minutes before taking the pot away of the fire, peel the skin of the onion blood sausage, crumble it and pour it on the pot.
