The Arnadí is the most legendary dessert of the Valencian gastronomy. It can be prepared in the any epoch of the year, because its ingredients are easy to obtain in spite of being a typical candy of Holy Week. It is a homemade cake browned colored adorned with almonds, it is made of pumpkin and sweet potato, sugar, almonds and cinnamon.


  • 1 Kg of pumpkin pulp
  • ¼ Kg of sugar
  • 4 eggs yolks
  • 200 Gr of ground almond
  • Almonds (entire and peeled)
  • Grated lemon peel
  • 5 or 6 gr of cinnamon


Cook into an oven the pumpkin in a 200 centigrade degrees temperature during approximately a hour, remove the nuts and remove the skin.

Put the pumpkin's pulp into a cloth bag and leave it hung up all the night long in order to drain itself in a natural manner.

The next day, mix the obtained pulp, the sugar and the beaten yolks, then cook them during some 15 ó 20 minutes without stopping to stir.

Incorporate to the previous mixture, the ground almonds, the grated lemon and the cinnamon.

Form some cones with dough and place them in a clay casserole, the geometric surface we have to form is decorated with the almonds.

These casseroles are put into the oven to 150 centigrade degrees during 15 minutes until they look slowly brown.
