In a frying pan fry slowly the bread slice and the garlic. Place on a mortar this mix and start to grind, add to this mixture the pepper, the raw garlic and finally the mixture of wine and vinegar. Add the oil and the sweet paprika with care; you don't have to burn it.
Put in the frying pan the mixture of the mortar, the water and the eel on top.
Let it boil everything for twenty minutes approximately.
